3.12 Lighting
3.12.1 The intensity of lighting required to be provided at work surfaces should be of a standard not less than the standard listed below:
a) Evisceration, washing, packaging, breaking up and
pieces preparation sections - 400 lux
b) Product inspection station - 600 lux
c) Stunning, bleeding and defeathering sections - 220
lux
d) Chillers, freezers, carton storage rooms, loading dock and any associated marshalling areas - 220 lux.
3.12.2 Shatterproof protective shields should be provided over exposed lights.
3.12.3 Artificial lighting must not distort colours or cause shadows at the inspection surface. This also applies where product is prepared for inspection or is packaged.
3.13 Hose Points
3.13.1 The use of long hoses should be avoided.
3.13.2 A suf cient number of hot and cold hose points should be provided to service the area.
3.13.3 Hose racks should be constructed of rust resistant materials.
3.13.4 Hose racks should be of a material and colour that does not cause marking of surfaces they contact.
3.14 Noise Factor
It is well recognised that prolonged exposure to excessive levels is detrimental to health and hearing. Processing areas of poultry establishments can be excessively noisy unless particular attention is paid to this problem. An awareness of the need to control noise level is important at the design stage, as problems can be avoided that would be expensive to rectify later.
