Part 1 | Minimum Standards of Construction of Poultry Processing Premises an effective drain in the compressed air storage tank and an effective lter, located as near as possible to the outlet, in the air discharge line. 10.8.2 Air lters should be capable of frequent cleaning. 10.8.3 The air exhaust ducts should be directed away from edible product and where possible, should be discharged to the outside atmosphere. 10.9 Tables Tables on which edible product is handled or otherwise treated should, when possible against walls, be provided with suitable splash backs. 10.10 Work Platforms and Stands 10.10.1 Work platforms should be of rust resistant metal and be of a closed surface designed or concrete construction. 10.10.2 Foot stand should be constructed of rust resistant metal, approved plastic or other approved material and be of a closed surface design. 10.10.3 Stands for preventing edible product containers from contacting the oor should be of rust resistant metal or other approved material and raised the containers at least 300mm from the oor. 10.11 Giblet Washing Equipment 10.11.1 Where giblets are manually washed, equipment should consist of a removable perforated rack positioned in a special sink or other container in such a way that product is prevented from contacting the bottom of the container. 10.11.2 An overhead spray system should be provided supplying potable water at suf cient pressure to effectively clean the product. 10.11.3 Wash water should not be able to accumulate in the container. 33
