2.3.1.11 a) If the parasitic infestation is extensive or if the carcass is emaciated, the entire carcass shall be condemned. b) If the parasitic infestation is slight, the affected part shall be removed and condemned, and the remainder of the carcass shall be passed for human consumption if it is otherwise wholesome. Pyaemia, Septicaemia or Toxaemia Carcass showing evidence of any pyaemia, (occurrence of multiple abscesses), septicaemia (extensive visceral haemorrhages) or toxaemia shall be condemned. Part 4 | Meat Inspection In Poultry Processing Plant 2.3.1.8 In ammatory process a) If the in ammatory process is wide-spread or there is evidence of systemic disturbance the whole carcass shall be condemned. b) If the in ammatory process is localised, the affected part shall be removed and condemned, and the reminder of the carcass shall be passed for human consumption if it is otherwise wholesome. 2.3.1.9 Over scalded Carcass which have been over scalded, resulting in a cooked appearance of the esh, shall be condemned. 2.3.1.10 ParasiticInfestation 2.3.1.12 Tumours a) Any organ or part affected with a tumour shall be removed and condemned and the remainder of the carcass shall be passed for human consumption if the carcass as a whole is not affected and is otherwise wholesome. b) The entire carcass shall be condemned if there is evidence of metastasis or that the general condition of the bird has been affected by the size, position or nature of the tumour. 2.3.1.13 Emaciated carcasses which are poorly fleshed with obvious wasting of the breast and thigh muscles shall be condemned. 71
