Code of Veterinary Practice For Poultry Processing Plant 10 3.2 Buildings 3.2.1 The buildings should be designed and constructed so that there is suf cient space to allow for processing, movement of personnel and effective cleaning. 3.2.2 Light coloured nishes should be used to help maintain sanitary conditions. 3.2.3 The premises should be provided with: a) adequate holding facilities under cover for all live birds awaiting slaughter; b) a separate room for stunning, bleeding and removal of feathers; the walls of this room should not be less than 3m from oor to ceiling or wall plate; c) a room for evisceration; the height of the wall should not be less than 3m from oor to ceiling or wall plate. The separation of this room from that referred to in (b) shall be by full height walls except for necessary self-closing door and approved openings suf cient for passage of products. d) a washing and packing room; wall height of not less than 3m from oor to ceiling or wall plate; e) a room or rooms adequately constructed and equipped for keeping under refrigeration all the dressed poultry that is likely to be on the premises at any one time; and f) a rent free of ce space including necessary furnishings, light and janitor service for the exclusive use for of cial purpose of the inspector. 3.3 Internal Walls 3.3.1 Materials used should be as follows: a) impervious to moisture b) smoothly nished c) rust resistant d) resistant to or protected from impact e) not subject to chipping or aking
